I'm no Pioneer Women, but I did want to share this super easy and delicious recipe with you.
It's one of those fabulous dinners that can be whipped up in a matter of minutes, in fact, the whole sauce can be made in less time than it takes to boil the water and cook the pasta.
I NEVER measure anything in this dish- just throw stuff in, it always works.
So here goes:
Boil your water and cook your pasta al dente.
While that's happening, get your skillet super hot and throw in a pack or two of diced pancetta. Cook it till it's crisp.
Remove the pancetta and throw in a finely diced shallot or two.
Cook it a few minutes until it's softened then add the pancetta back into the pan.
Turn down the heat, add some milk (about a cup or so) and a bag of frozen peas. (Thaw them a bit first)
Add the cooked pasta, and throw in some freshly grated parmesan cheese.
Delish!
Ummmmm. Who picked out the peas?
